Our main event, in our special Coronation Day feast ‘fit for a king’, is steak – cooked the wood-fired way, topped with king prawns and served with Jersey Royal chips. Think it’s not possible to cook chips in a wood fired oven? With our artisan woodfired ovens from Valoriani, it’s perfectly possible, if you know how! Proof, again, that our wood-fired ovens are more than a pizza oven.
Ingredients
One nice Sirloin Steak
2 large king prawns
4 cherry tomatoes
4 large chestnut mushrooms
A handful of fresh peas
8 Jersey Royals cut into chips
½ red onion finely sliced
2 tablespoons of white wine
2 tablespoons red wine
Steak seasoning comprising a teaspoon each of Black pepper, paprika, oregano, cumin powder, turmeric, demil glace (gravy powder or half and OXO cube could substitute, ½ teaspoon garlic salt Stir all of the ingredients together
1 tablespoon of olive oil
Cooking oil sufficient to cover the chips
A tablespoon of Oregano
Chopped chilli
Salt and pepper to taste
Method
Rub half the olive oil onto the steak and rub with the seasoning
Chips – in an ovenproof pot, deep enough to take the cooking oil, including the chips, with at least an inch of the pot above the oil
Keep the pot near the mouth of the oven on the opposite side to the flame. It is important to monitor the oil, so it does not bubble over or ignite. Keep it within easy reach, using a very thick oven glove, to avoid spilling and easy manoeuvring of the pot.
The oil will soon simmer nicely. Add the chips and cook until golden, or however you like them, for approximately 15 minutes
Steak – n an ovenproof skillet, using half the olive oil, sauté the onions, tomatoes and mushrooms, keeping the skillet in the mouth of the oven. Once the onions have softened, add the seasoned steak and peas to the pan and return to the oven until the steak has browned on the outside. Add the red wine and cook until the steak is as you prefer
Prawns – in a separate skillet sauté the king prawns and chilli. Season with oregano, salt and black pepper in the white wine
